Now, I don't mean to toot my own horn so to speak, but I am pretty damn good at making pancakes. I posted a picture on Instagram of these pancakes I made on Saturday, and a few people tweeted asking for the recipe, so here you have it!
Ingredients
1 tablespoon of baking powder
1 1/2 cups of all-purpose flour
1 teaspoon of caster sugar
2 large eggs
2 tablespoons of soft butter
1 1/4 cups of milk
Basically there's no skill to making these, it's all in the ingredients. Just mix them all together in a gigantic bowl, I like to do it by hand. Then when it's all blended and lump free, transfer it to a jug. Then you're gonna want to heat a tiny bit of butter in a pan on a medium heat (I put mine on about 6/9). Once the butter has melted and coated the pan, pour in the batter. I just use a little because they do expand, around 3 tablespoons worth of batter, but I just guestimate! Allow to cook until the pancake has air bubbles round the edges, and then flip. Cook for thirty seconds and then it's done!
I like to serve these with yoghurt and then any fresh fruit we have in the house!
